An unpleasant vegetable can make adorable pizzas. Eggplant is a strangely shaped vegetable. It’s stunning in color, but most people say it’s ugly, slimy, or simply not to their taste. I’m here to save eggplant for you. As with most things, it all comes down to how you pair them to make them appetizing. This modest eggplant pizza recipe is mostly an eggplant parm with my “On Deck” twist. This pizza is incredibly tender and juicy, and it will turn you into a fan.

For the eggplant sauce

Eggplant Sauce for the Modest Eggplant Pizza

Type of recipe : Sauce

  • 1 medium-sized eggplant, cut into ½-inch slices and then diced.
  • 1 massive pink onion, thinly sliced
  • 30 ounces of your pizza sauce
  • Olive oil
  • Kosher salt
  • Black pepper
  • Granulated garlic
  1. Drizzle the olive oil into a frying pan and heat over a medium-low heat.
  2. Add the thinly sliced onion and cook dinner slowly to caramelise. Do not burn! Cooking should be slow and simple.
  3. While the onions are preparing for dinner, add the diced eggplant to a baking sheet, sprinkle with salt, pepper, and granulated garlic, drizzle with a little extra olive oil, and toss to coat.
  4. Cook the dinner at 550°F for 10 minutes, stirring every two minutes to ensure even roasting.
  5. When the eggplant is roasted, remove it from the oven and add it to the onions in the pan. Gently stir and let the dinner cook for another minute or two.
  6. Slowly add the pizza sauce, letting it simmer and reduce gently for 10 minutes. Set aside and let it cool.

Recipe : Pizza

  • 12-inch pizza
  • 2 oz pizza sauce
  • 4 oz of eggplant sauce
  • Romano
  • Stracciatella
  • Micro basil
  1. Stretch the dough to the desired size, place it on a floured pizza pan, and apply 2 ounces of pizza sauce.
  2. Next, add 4 ounces of eggplant sauce and use a ladle to spread the sauce evenly around the pizza.
  3. Sprinkle with Romano cheese and bake in the oven at 550°F for 8 to 10 minutes, or until the desired level of doneness is reached.
  4. Let the pizza cool on a rack for a minute or two, then layer the stracciatella cheese on top, drizzle with extra virgin olive oil, and sprinkle with micro basil.
